But my question is, who was your favourite coin-op manufacturer from back in the day and why?

That's actually the most difficult question you could ask me. Why?  I may be the only one but I Arcades were different as the quality was spread across all the manufacturers so picking one is hard. I would have to say Capcom if I have to choose though and the main reason is Commando, a game that started this journey for me. Simples. (in the end lol)

wow..this is a devilish question to ask a mere mortal!, as Zapity said, so many of them created games that where both original and spectacular in the own right , but if I was to choose one Company, that's stands out from the rest of its' arcade breveren would be Capcom, they've created so many never seen before style games, such as Ghosts'n Goblins, Commando, Street Fighter, Final fight..the list goes one, although the other companies did their own original style on games, allot of formulas came from Capcom's ideas...so my pick is Capcom!

For me it comes down to just 3 companies:

Atari, Sega and Taito - through the 80s and 90s they released more classic games than anyone and continued to come up with more new ideas and technical advancements.

I went with Atari in the end because not only did they create the whole arcade industry but also innovated more than anyone else time and time again from the early days with stuff like Breakout, Tempest and Missile Command right through to games like STUN Runner, Hard Drivin' and A.P.B.

Looking down that list of companies, an impressive list indeed(!), it is so hard to choose just one!  Each has given us seriously epic pieces of gaming history. 

I've already nearly chosen Atari thanks to Star Wars, Gauntlet, Super Sprint and I-Robot - one of my favourite arcade games.  Capcom - Commando, 1942, Ghosts n' Goblins, Sidearms, Strider.  Namco for another of my favs, Rolling Thunder.  And then there's Dig Dug & Rally-X... man!  I'm having nostalgia overload!!

After all that though my vote's going to Konami.  Track & Field and Hyper Sports created such a spirit of competition when played with mates and were still brilliant fun in single player.  Shao-Lin's Road is equally one of my favourite arcade games along with Amidar.  So, Konami, I salute you.

Console Compulsive

Such a hard choice to make as all of the companies have produced fantastic games. I think I will have to go for Atari as my arcade days would have meant nothing without Star Wars, 720 degrees, Gauntlet, APB, Return of the Jedi, Road Runner, Asteroids, Blasteroids, Space Lords, Pole position and tons of others that i can't think of at the moment.

I've only played 3 arcade games that I can recall though. I played Sega Rally and Daytona USA at Warwick University as I went there a lot (my dad worked there).

I also played Mortal Kombat 4. I have a picture of me standing next to it after I beat a few people.

That's it. I suppose my vote has to go to Sega. Had a lot of fun playing Sega Rally & Daytona USA with my best friend at the time.

They made my fave game of all time (SFIIce) and so many proper CLASS games. Capcom all day long for me. Until recently they were my fave across all platforms but Bethesda have pipped them in the last few years.
