Heres a few of my fave FPS games, that haven't been mentioned yet:
Timesplitters - (PS2) - A few ex-Rare guys who worked on Goldeneye and Perfect Dark, formed their own development team called Free Radical Design. Their first game; Timesplitters on the PS1 was a fast action, secret filled FPS with great humour and level design. The story bridged different times in history which allowed for a multitude of different level locations. Heres a look:

Exhumed - (Saturn) - Known as Powerslave in the US and Seireki 1999: Pharaoh no Fukkatsu in Japan and developed by Lobotomy Software. The game was set in Egypt in present times, possibly influenced by the film Stargate and played like a cross between Doom and Hexen. Also released on PC and PS1, each version having different level designs and power ups included. Heres a look:

Turok: Dinosaur Hunter - (N64) - Based on the comic book of the same also released by Acclaim, Turok is an FPS that added adventure elements bringing in the more free-roaming exploration gameplay seen in Tomb Raider. This meant you could climb walls, jump gaps, swim and crawl as you hunted for keys to open up the next portal and err hunt dinosaurs. The game spawned 6 sequels, but the original was always the best:
